“City to FC: Unique coffee, raw sugar and cane juice sweetness, dried fruit, grape, floral accent, thick body and sweetness.” -Sweet Marias

The first thing I noticed was the body, it is thick and lingers on the tongue well after the first sip. The floral accent is bright right after brewing, and pairs well with the sweetness. The raw sugary sweetness has a slight green grape sweetness, but there is little to no acidity in the cup. The sweetness is smooth overall, with just hints of fruit. I definitely got a hint of grape, but there were small hints of red fruits.

Still at a medium temperature, the flavors have integrated a little more, but it is still all about the sweetness. There is no hint of acidity, which just seems to add more to the thick body. The floral note seems lighter, but it is still present. I have not tried cane juice by itself, but I imagine its sugary taste could definitely be contributing to the sweetness in this cup. As it cooled, I got a hint of apple.

I liked the body on this roast. It was big and thick and really helped to carry the sweetness through the cup. There was almost no hint of acidity, which was a nice change. The raw sugar sweetness was apparent from the beginning, and I liked the subtle hints of fruit that came through as it cooled. The floral note was also interesting, almost invoking a softness that helped pair the thick body with the sweetness. I enjoyed this roast, and I can see this being my first cup in the morning, with the thick body and sweetness. As for the roasting details, the roast was done in the Gene Cafe roaster, with a heat setting of 460 degrees, for 15 minutes. First crack started approximately around 13:00 minutes and continued for about 1.5 minutes. Cooling was done in the Gene, down to 215 degrees, and then removed and cooled in a colander until room temperature.
