“City to Full City: Juicy cup, fruited flavors, cooked raspberry, rhubarb, guava/tropical accents, ripe fig, plum, soft acidity, pleasant tart touch.” -Sweet Marias
The first sip is juicy and the body is smooth and light, with a light acidity. There are raspberry notes, and what I think is rhubarb, with a light tartness that lingers in the finish. The finish itself is smooth and clean with only the lingering acidity tartness.
As it slowly cools, the raspberry note is stronger, and I did get a hint of the fig as well, and there is a general fruit note, which contributes to the sweetness of the cup. It is well balanced, with a little acidity on the finish. There is a light tropical note that flashed through, which did remind me of guava, but it was very light and did not last long either, as the cup cooled. The finish is clean, almost tea-like, with a lingering tartness.
The overall fruit sweetness of this roast is what sticks out, however the raspberry and fig notes did make it a little more interesting. This roast was targeted at City+, but it might have gone a little closer to Full City, as the lighter fruit notes did not stand out as much as I expected. I will try another roast with this and try to keep it closer to City and try the tasting again. As for the roasting details, the roast was done in the Gene Cafe roaster, with a heat setting of 460 degrees, for 15 minutes. First crack started approximately around 13:00 minutes and continued for about 1.5 minutes. Cooling was done in the Gene, down to 215 degrees, and then removed and cooled in a colander until room temperature.
