The initial taste has a light sweetness, with hints of strawberry and cherry, however the finish lingers with dark chocolate, which does overpower the sweetness a little. The body is light, but also has a light juiciness to it.
As the cup cools, the strawberry and raisin flavors are more pronounced with a hint of light spice, and the acidity is still light. The chocolate tones have decreased to a soft cocoa on the finish, but still lingers with dark bitters on the back-end. The syrupy mouthfeel continues to linger with each sip.
This roast was done in the Gene Cafe roaster, with a heat setting of 460 degrees, for 16 minutes. First crack started approximately around 13:00 minutes and continued for almost a minute and a half. Cooling was done in the Gene, down to 215 degrees, and then removed and cooled in a colander until room temperature.
