“City to FC+: Caramel and malty sweetness, apple, peach, and nectarine. Dark cacao and light malic acidity, SO espresso.” -Sweet Maria’s

The initial taste has a light sweetness, with a clean tea-like finish. The body is very light with low acidity, but the mouthfeel has a slight juiciness to it.

As the cup cools, the caramel sweetness has increased with a hint of apple and nectarine, but there is also a malic acidity with light cacao bitterness. The body is still light, but does have a juiciness to it, and the finish has a subtle dark sugar sweetness, with the lingering malic acidity on each sip.

This roast was done in the Gene Cafe roaster, with a heat setting of 460 degrees, for 15.5 minutes. First crack started approximately around 13:00 minutes and continued for almost two minutes. Cooling was done in the Gene, down to 215 degrees, and then removed and cooled in a colander until room temperature.
