Initial sips revealed a nice sugar sweetness, but there was a light nut like flavor to the the finish, which also lingered with a honey-like viscosity. The body feels juicy, and light nut notes are evident, but they are well balanced with the sweetness. I did get a little acidity as well, but it was very light, but overall the cup is very well balanced.
Still at a medium temperature, the light acidity is starting to creep into the finish, but the sweetness has also increased with the honey-like sweetness in the finish. The nuttiness and the body juiciness have also increased. The sweetness is still very smooth, and it does have a honey overtone, but there is a slight dark sugar flavor in the finish that lingers as well. As the cup cooled down, the juiciness and acidity are still evident, and the finish is less overpowering, but the flavors are still well balanced.
Overall, this is a great first cup of coffee in the morning, with the dark sugar flavors and balanced sweetness with the acidity, it is a palate pleaser. As for the roasting details, the roast was done in the Gene Cafe roaster, with a heat setting of 460 degrees, for 15.0 minutes. First crack started approximately around 13:30 minutes and continued for about 1.5 minutes. Cooling was done in the Gene, down to 215 degrees, and then removed and cooled in a colander until room temperature.
