“City+ to FC+: Raw sugar, graham cracker crust sweetness, tart green apple, nice black walnut finishing note, refreshing clean flavors.” -Sweet Marias

The first sip is sweet, with a light tartness from the green apple notes. The black walnut finish is interesting, and it compliments the sweetness very well. There is little acidity, and the sweetness is light. It has a medium body, which allows the walnut notes to balance out the clean finish.

Still at a medium temperature, the sweetness has increased a little, and the graham cracker crust is a pretty good description for it. It’s not too sweet, as the walnut finish is also stronger, which balances the cup. The body is still juicy, but with it all being balanced, the sweetness is what stands out as the walnut does not linger in the clean finish. As it continued to cool, the tart fruit notes were also less noticeable, with little to no acidity present.

I liked the walnut finish on this roast, which was evident from the start, but it stood out more at the beginning. It also paired well with the sweetness, balancing the cup. There was very little acidity, and the body was juicy from start to finish. This roast was targeted at Full City, and I think it was right in the sweet spot, as it retained some tartness, but had a bigger darker finish. As for the roasting details, the roast was done in the Gene Cafe roaster, with a heat setting of 460 degrees, for 15 minutes. First crack started approximately around 13:00 minutes and continued for about 1.0 minutes. Cooling was done in the Gene, down to 215 degrees, and then removed and cooled in a colander until room temperature.
