“City+ to FC: A nice, sweet coffee with raisin, plum, red apple, green grape, underlying hints of green nut, citrus rind finish, great SO espresso.” -Sweet Maria’s

The initial taste has a sugary sweetness, with the raisin and plum hints on the front end, however the finish definitely has a light acidity to it, with just a hint of nuttiness. The body is light but has a juiciness to it. The finish lingers with hints of citrus tartness, but balanced nicely with the sweetness.

As the cup cools, the darker raisin and plum flavors are more pronounced, but the acidity is also a little more crisp, and the nuttiness has increased on the finish, which has a syrupy mouthfeel and continues to linger with each sip.

This roast was done in the Gene Cafe roaster, with a heat setting of 460 degrees, for 16 minutes. First crack started approximately around 13:00 minutes and continued for almost a minute and a half. Cooling was done in the Gene, down to 215 degrees, and then removed and cooled in a colander until room temperature.
